Optimum use of space
For an efficient proofing process, we supply the CapStep system. This construction method ensures optimum use of the available height in a building. The CapStep is often applied by us as a refrigerator, freezer and storage system.
The StepProof system is used to ensure an optimum proofing process for long-form products, such as stick bread types. This conveyor system uses a lift to distribute the baking forms or dough sheets across conveyor belts located above one another. After the proofing time has ended, the belts are emptied according to the first-in, first-out principle.
Proofing on broad carriers
A system which is often used for an effective proofing process is proofing dough on broad carriers. These carriers make it possible to proof (and bake) a wide range of products in a free-standing manner. This working method is also possible using the CapStep paternoster system.
In the case of freestanding bread types which proof in baskets, such as rye mix breads, the SwingCap system guarantees an optimum proofing process. The dough pieces to be proofed are laid in baskets which are mounted on rotating axles. These axles are mounted on a frame. After passing through the proofing system, the baskets are automatically tipped up and emptied. The risen dough pieces roll slowly and carefully onto a conveyor below, towards the oven conveyor.
